1. Product Nature & Artisan Process
- Natural Fermentation: Our sourdough products are leavened exclusively by our living lievito madre (Italian stiff starter) and do not contain commercial yeast.
- Process Variance: We utilize a traditional long-fermentation method. Because our products are handcrafted using a living culture, fermentation times are determined by our master bakers based on ambient kitchen conditions, starter activity, and peak dough maturity to ensure the highest quality.
- No Time Guarantees: While we strive for consistency, we do not guarantee a specific number of fermentation hours for any individual batch. Any references to “36 hours” or similar durations on our marketing materials or website are indicative of our typical artisan process and do not constitute a technical specification or a guarantee of a specific timeframe.
2. Allergen & Health Information
- Gluten Disclaimer: Although our long-fermentation process helps break down certain starches and proteins, all our sourdough products are made from wheat and contain gluten.
- Liability Limit: Our products are not suitable for individuals with Celiac disease or severe gluten allergies. Customers with mild sensitivities consume our products at their own risk. Amalfi Bread & Pastry is not liable for adverse reactions resulting from the consumption of our traditional wheat-based products.
3. Product Availability & Sales
- Daily Production: All pastries and breads are baked fresh daily.
- Limited Supply: Due to the time-intensive nature of natural fermentation, our daily supply is limited. We do not guarantee the availability of any specific product at any given time, and items are sold on a first-come, first-served basis.
