The dough ferments slowly — 36 hours at Amalfi Bread & Pastry — developing complex flavour, a crackling crust, open crumb, and a naturally longer shelf life. Our sourdough contains just four ingredients: flour, water, salt, and our lievito madre.

Does sourdough bread contain gluten?

Accepted Answer

Yes. Traditional sourdough is made from wheat and contains gluten, so our current loaves are not safe for people with celiac disease. However, we are currently in the test kitchen perfecting an artisan gluten-free option! Stay tuned. (Note: Our traditional long fermentation does partially break down gluten and phytic acid, making it easier to digest for those with mild sensitivities).

How long does sourdough bread stay fresh?

Our sourdough stays fresh for 3–4 days at room temperature stored in a cloth or paper bag — avoid plastic as it softens the crust. It can be frozen sliced for up to 3 months. To revive a day-old loaf, warm it in a 175°C oven for 8–10 minutes.
